Snacktime: Coconut Oatmeal Raisin Bars










I made these bars with coconut oil instead of butter for a healthy fat bar. These are low in sugar and contain a tablespoon of flax seed for your Omega 3's.  The coconut and raisins add some extra sweetness.

I don't feel guilty letting Rowan snack on these healthy bars. Plus, he has been pickier than usual lately, so if he eats a couple of these and some strawberries for a meal, I feel ok with myself. They also make a nice breakfast and freeze well. Try them!

Coconut Oatmeal Raisin Bars

3/4 cup coconut oil
1/2 cup light brown sugar loosely packed
1 egg
1 teaspoon vanilla extract
1/2 cup + 1 tablespoon sifted whole wheat flour
1 tablespoon flaxseed meal
1/2 teaspooon baking soda
1 teaspoon cinnamon
1/8 teaspoon salt
1 cup rolled oats
3/4 raisins
1/2 cup unsweetened coconut


Preheat oven to 350 degrees.

In a large bowl, beat coconut, brown sugar, egg and vanilla until creamy. In a medium sized bowl, whisk sifted flour, flax meal, baking soda, cinnamon, and salt. Add this flour mixture to the wet mixture and stir to combine. Add oats, raisins and coconut. Mix until all ingredients are well incorporated.

Spread mixture into a 6 x 9 inch parchment-lined baking dish. Bake for 20-25 minutes. Oven times may vary so check the bars 20 minutes. These taste better if they are taken out of the oven a little earlier rather than later. Cool for 5 minutes in the baking dish, then remove from pan and let cool completely. Cut into squares.

Other ideas: Try replacing the raisins with chocolate chips and walnuts or pistachios.

  4. I added walnuts and chia seeds and a little egg whites to the mixture. They're in the oven right now, but smell sooo delicious.
